Gooey, warm and comforting, you’ll never believe this decadent pudding is actually good for you! It’s the perfect dessert to make when that sweet tooth hits and you need a treat, fast. It gets its sweetness from banana, which is high in potassium, protein and fibre, and a touch of honey, which leaves you feeling satisfied but not overly full. Be careful not to overcook the mixture, as you want it to be a little undercooked for that deliciously saucy texture.

What you’ll need:

1 egg, lightly beaten
1 banana, mashed
1 tsp honey (optional)
2 Tbsp nut butter (try almond, peanut or tahini)

2 Tbsp cocoa powder
½ tsp baking powder
1 tsp ground cinnamon
Berries, to serve
Nuts, chopped, to serve

Instructions:

Combine the egg, banana, honey and nut butter, then add dry ingredients and beat until smooth.
Pour into two small ramekins or mugs.
Cook in the microwave on high for 1½ minutes. Test the consistency – it should be just cooked on top but still gooey in the middle. If not, continue cooking for another half minute.

Top with berries and chopped nuts and tuck in! ENJOY!
