This simple recipe takes half an hour to make and is a refreshing dish to serve up on hot summer evenings. Usually it would be served in a tortilla wrap, but swap it out for large leaves of gem lettuce or even cauliflower wraps – the filling is so deliciously fresh and zesty, as well as satisfying, that you won’t miss the carbs.

Servings: 4

What you’ll need:

  • 4 chicken breasts, cut into strips
  • Zest and juice of 2 ½ limes (or 1 ½ lemons)
  • 2 tsp crushed black pepper
  • 1 tsp olive oil
  • 1 avocado
  • ¼ cucumber, finely diced
  • 1 cup rosa tomatoes, finely diced
  • ½ tsp smoked paprika
  • Handful fresh coriander, chopped
  • Salt and ground pepper
  • Plain yoghurt, to serve
  • Gem lettuce, to serve

Instructions: 

  1. Combine the chicken, juice and zest of 2 limes, pepper and olive oil and allow to marinate for 15 minutes.
  2. Combine avocado, cucumber, tomato, smoked paprika, coriander and remaining lime juice to make a guacamole and season. Set aside.
  3. Put a pan on high heat and cook chicken with marinade until golden and cooked through.
  4. Serve chicken in gem lettuce wraps with a dollop of guacamole and a drizzle of yoghurt to serve.
