This simple recipe takes half an hour to make and is a refreshing dish to serve up on hot summer evenings. Usually it would be served in a tortilla wrap, but swap it out for large leaves of gem lettuce or even cauliflower wraps – the filling is so deliciously fresh and zesty, as well as satisfying, that you won’t miss the carbs.

What you’ll need:
- 4 chicken breasts, cut into strips
- Zest and juice of 2 ½ limes (or 1 ½ lemons)
- 2 tsp crushed black pepper
- 1 tsp olive oil
- 1 avocado
- ¼ cucumber, finely diced
- 1 cup rosa tomatoes, finely diced
- ½ tsp smoked paprika
- Handful fresh coriander, chopped
- Salt and ground pepper
- Plain yoghurt, to serve
- Gem lettuce, to serve
Instructions:
- Combine the chicken, juice and zest of 2 limes, pepper and olive oil and allow to marinate for 15 minutes.
- Combine avocado, cucumber, tomato, smoked paprika, coriander and remaining lime juice to make a guacamole and season. Set aside.
- Put a pan on high heat and cook chicken with marinade until golden and cooked through.
- Serve chicken in gem lettuce wraps with a dollop of guacamole and a drizzle of yoghurt to serve.
