This scrumptious trail-mix is the ultimate snack, great tasting and a good combination of all 3 macronutrients: protein, healthy fats and carbs. Great way to keep you energy levels up when on the road, hiking the trails, or fending off the afternoon slump at work.
Here’s what you need:
• 1 teaspoon Chia seeds
• 3 Tablespoons fi ltered water
• 2 Tablespoons raw honey, melted
• 1/2 teaspoon vanilla extract
• 1/2 teaspoon almond extract
• 2 Tablespoon coconut oil, melted
• 1 cup sliced almonds, raw and unsalted
• 1 cup pecans, raw and unsalted
• 1 cup pistachio nutmeats, unsalted
• 1 cup dried blueberries, unsweetened
• 1/2 cup sesame seeds
• 1 cup large, unsweetened coconut flakes
Preparation:
1. Mix the chia seeds and water in a small cup and set aside for 15 minutes, until it becomes gel-like. 2. Preheat oven to 190 degrees C. Generously grease a baking pan with coconut oil. 3. In a small bowl combine the honey, extracts, coconut oil and chia seed mixture. 4. In a large bowl combine the nuts, berries, seeds and coconut flakes. Mix in the wet ingredients until well combined. 5. Spread over the prepared baking sheet. Bake for 10 minutes, stir, and then bake for another 10 minutes until evenly golden.
