Today we have a delicious vegetable salad recipe that includes roasted vegetables, topped with fresh flavours and micro plants have it as a healthy side dish or prepare as a flavourful meal. This dish is so easy to make and perfect for any weather.

What you’ll need for your roast ?
- Baby Marrow
- Sweet Potato
- Red Pepper
- Baby Corn
- Red Onion
- Rosmary
- Salt & Pepper
- Veggie Seasoning
- Olive Oil
Preparation:
Preheat oven to about 180°C/200°C fan-forced. Place all vegetables in a oven tray or bowl add seasoning then drizzle over some olive oil. Toss well to combine. Roast for about 20 minutes.
Meanwhile you can a make dressing or serve as is, allow your veggies to cool, place rocket, baby spinach like Hlasedi has done and top off with some micro plants.
Hlasedi has also added microgreens to this salad which is packed with health and nutritional benefits.
